Hunter Brookes could possibly be the Archimedes of caffeinated beverages, but as he gazed upon three perfectly placed cups of coffee, it was not ‘Eureka!’ he cried, but ‘Therefore’: the perfect pairing of caffeinated symbology and the logical, scientific approach to coffee. Thus began Therefore Coffee Roasters.
Coffee has been running through Hunter Brookes’ veins since he started in the industry at the age of 18. If he looks familiar, it’s because you have no doubt seen him over the years working in some of the Gold Coast’s finest caffeinated establishments. After developing a passion for coffee, he went on to open his own café and now his own roastery.
“The Tweed coffee scene is really good, I’m excited to be a part of it,” he tells us.
“I wanted a place where people can come in, see where their coffee is roasted and sample the different offerings.” Hunter chats while he pours us a batch brew of his current offering Ethopian Guji, which is beautifully crisp with flavours of peach, raspberry and a big mandarin citrus hit.
Therefore truly offers a speciality coffee experience. After Hunter has received some samples from coffee merchants he will roast a small batch and then do a cupping with a couple of other coffee lovers to have them taste each sample and decide which ones he likes and wants to feature.
“We just do it right, we don’t cut corners, we get good coffee and we roast it, that’s it” Hunter informs us as we dive into a flat white that has a beautiful salted caramel taste with a mandarin acidity peeking through with each sip.
If you are wanting to experience Therefore Coffee Roasters for yourself, their brew bar is open Monday and Tuesday from 8.00am to 11.00am with cupping occurring every Tuesday.
“It is a way for coffee lovers to come in, talk about coffee, learn a little bit and have a good coffee experience” Hunter says. “It sells itself, you’ve just got to try it.”
